In honor of my beautiful sister-in-law’s wedding celebration yesterday, I wanted to include this recipe. Matrimonial cake, or date squares, are a celebratory dessert in my family’s tradition. Although my grandma’s original recipe includes wheat, this variation would satisfy anyone’s sweet tooth in our family, but especially those that are gluten-free.
Gluten Free Matrimonial Cake (Date Squares)
2 cups organic GF quick oats
2 cups organic GF oat flour
1 cup organic butter
1/2 cup local honey
1/2 cup pure maple syrup
1 teaspoon baking soda
1/2 teaspoon salt
3 cups (organic, if possible) pitted dates
1 1/2 cups water
Juice of one lemon
Preheat the oven to 350 (180) degrees.
Melt butter, and stir in honey and maple syrup.
Combine Oats, oat flour, baking soda, and salt.
Add to butter mixture and stir to combine.
Put half the mixture into a 9×12 inch pan.
Meanwhile, add the dates, lemon juice and water to a pot.
Cook the dates on medium until the water is gone and the dates are soft.
Spread the date mixture over the oat mixture in the pan.
Spread the remaining mixture over top of the date mixture.
Bake for 30 minutes.
Let cool before cutting (if you can!).
Makes 20 servings.
